Lisa Vespa's Lemon Cookie

6 eggs 1 box lemon cake mix with

1 cup sugar pudding

1 cup Crisco 4 ½ cup of flour

1 cup milk 2 tsp baking powder

2 tsp vanilla Powder sugar to coat

Beat together the eggs, sugar and Crisco for 10 minutes. Add milk, vanilla and cake mix; continue beating with electric mixer.

Sift together flour and baking powder; add the cake mixture and continue beating with a wooden spoon. The batter will become sticky.

Drop a heaping teaspoon of batter in a plate that has been heavily dusted with powdered sugar, then roll it in the powdered sugar and shape into a 3-inch pencil shape and place it on an un-greased cookie sheet. Shaping each one into the for of an “S”. Bake at 350 ‘F for 12 minutes. The recipe will make about 8 dozen cookies.
