Try this Italian folklore soup recipe. You will be glad you made it. Keep it as a tradition for when you want to try something different.
2 - 3 cloves of fresh garlic
2 tablespoon of olive oil
1 package frozen spinach, broken into 2 inch pieces
6 oz. cheese tortellini
1 cup slivered cooked breast of chicken
2 teaspoon of parsley
Salt and fresh ground pepper
Grated Parmesan or Romano cheese
7 cups of chicken stock or you can use canned broth.
Heat olive oil and garlic until slightly brown. Add chicken stock to garlic and bring to a boil. Strain if desired. Add spinach and cook approximately 10 minutes. Add tortellini and cook approximately 10 to 12 minutes. Add slivered chicken and heat thoroughly. Add parsley, salt, pepper the last 2 minutes of cooking. Serve with Parmesan or Romano cheese.
